Ground Chicken Patties

Ground Chicken Patties (Italian version)

3# freshly ground chicken breast

½ small zucchini ground or grated

1 small yellow onion diced very small (Vidalia onion chopper!)

1 small green pepper diced very small

3 cloves garlic minced

Salt, pepper, oregano, basil, garlic powder, onion powder to taste

½ to 1 cup finely chopped fresh parsley

1 ½ - 2 ½ cups old fashioned oats (not quick cooking type)


Clean the chicken breasts thoroughly and then grind using the Kitchenaid® attachment for your mixer (or purchase pre-ground). Send the zucchini through the grinder as well or use your box grinder to grate it finely. Chop the onion and pepper very small (the Vidalia onion chopper small grate is a game changer!) Mince the garlic and chop the parsley. Mix the chicken, vegetables, seasonings and parsley together in a large bowl. Add the old-fashioned oats by the ½ cup and mix thoroughly after each addition. Keep adding oats until the meat holds a ball shape without being dry and crumbly.


Heat your oven to 350 degrees. Form the meat into 6-8 oz patties. Flatten to approximately 1 inch and place them on a sheet pan. Salt and pepper the tops and bottoms. Heat a cast iron or heavy metal pan to medium high. Add a small amount of olive oil. Place patties in the pan and cook approximately 3 minutes per side (you should note a nice golden-brown sear). After cooking on both sides return to the sheet pan and place in the oven for 12-15 minutes. These freeze and reheat beautifully! Serve with a small amount of red sauce.

1 very small zucchini ground or grated

1 small red onion diced very small (Vidalia onion chopper!)

1 small yellow pepper diced very small

1-3 fresh jalapenos diced very small (to taste)

Salt, pepper, onion powder, red pepper flakes,

½ to 1 cup finely chopped fresh cilantro

1 ½ - 2 cups old fashioned oats (not quick cooking type)

Clean the chicken breasts thoroughly and then grind using the Kitchenaid® attachment for your mixer (or purchase pre-ground). Send the zucchini through the grinder as well or use your box grinder to grate it finely. Chop the onion and yellow pepper and jalepeno very small (the Vidalia onion chopper small grate is a game changer!) Chop the cilantro. Mix the chicken, vegetables, seasonings and cilantro together in a large bowl. Add the old-fashioned oats by the ½ cup and mix thoroughly after each addition. Keep adding oats until the meat holds a ball shape without being dry and crumbly.
